Creamy Mushrooms on toast


  • 2 tsp olive or rapeseed oil
  • ½ small red onion, finely chopped
  • 150g button mushrooms, roughly chopped
  • 150ml chicken or vegetable stock
  • 100ml Quark (soft, unsalted cured cheese)
  • 1 thick slice granary or wholemeal bread, toasted
  • Grilled tomato, to serve
  • Prep 5 mins
  • Cook 10 mins
  • Serves 1

  1. Heat the oil in a small non-stick frying pan, add the onion cook over a medium heat for 2-3 minutes
  2. Add mushrooms and continue to cook for a further 2-3 minutes
  3. Add the stock, reduce the heat and cook for 5-10 mins or until the mixture is thick and syrupy. Stir in the Quark.
  4. Spoon the mushroom mixture over the toast and serve with grilled tomato.
